“PRESERVING THE HUNT” Programs at Gorge libraries

As part of the ‘2014 Community Resiliency’ series organized by Stevenson Grange #121, the public is cordially invited to “Preserving the Hunt” presented by Master Food Preserver, Linda Peppers on Saturday, August 30. There will be two (repeat) sessions of the program, a morning session from 10 to noon at the Stevenson Community Library, and an afternoon session from 2-4:00 pm in the White Salmon Valley Community Library’s Sprint/Baker Gallery.

After a fun hunt out in the wilderness, preserve your prize using a pressure canner. Learn the basics of meat preservation and how pressure and high temperatures tenderize your meat, allowing the flavors of fresh vegetables, herbs and seasonings to permeate each fiber. This workshop will also explore safely preserving your garden bounty in soups and stews, and canning both plain and smoked fish.

For a small donation you may bring your dial canner gauges to be tested for accuracy. On ‘All American’ and the older, heavyweight ‘Presto’ canners, please remove your dial gauge prior to bringing for testing. It is not necessary to bring your entire canner, just the lid to check the gasket and other parts.
